Haitian Chicken

Ingredients: 2 lbs of chicken 2 Tb olive oil 1 onion, finely chopped 1 red pepper, sliced 2 tsp pepper 1/2 tsp adobo seasoning 2/3 cup epis 1/3 cup wine (optional) 2 Tb tomato paste 1 cup chicken broth

Directions:

  1. Brown chicken in very hot oil.
  2. Add epis, onion, red pepper, and black pepper. Continue to cook until thick and starting to stick to bottom of pan.
  3. Add wine and scrape bottom of pan. Cook until mostly reduced.
  4. Add tomato paste and chicken broth. Cover and simmer 30-45 min.
  5. Serve over rice (~1 cup uncooked rice).
